Latvian-style snack sandwiches

Ingredients

For 4 servings

  • Fazer “Gardā” rye mini toast bread
  • 1 egg
  • 10 g grated cheese
  • Salt
  • Pepper
  • Mayonnaise
  • Herring fillet
  • Cottage cheese
  • Sour cream
  • Dill
  • Herb cream cheese
  • Cucumber
  • Spinach leaves
  • Parsley

Preparation video

Place the rye mini toast slices on a baking tray and toast them in the oven at 200 C for 10 minutes. Meanwhile, in a bowl, mix the boiled grated egg, grated cheese, salt, pepper, and mayonnaise. When the toast slices are done, let them cool. Prepare 3 types of toppings:
1.    First, place 2 pieces of herring on the toast, then add a spoonful of cottage cheese mixed with sour cream, and garnish with dill.
2.    Spread herb cream cheese on the toast. Cut the cucumber lengthwise into a thin slice, roll it into a little tower, and place it on top of the cream cheese.
3.    Place a spinach leaf on the toast, then add the prepared egg mixture, and garnish with parsley.
