Rice with vegetables and chicken

Ingredients

For 4 servings

  • 400 g chicken breast
  • 250 g rice
  • 130 g yellow pepper
  • 130 g red pepper
  • 100 g cherry tomatoes
  • 90 g broccoli
  • 60 g green peas
  • 5 g chicken spice mix
  • 4 g dried basil and garlic
  • 1 onion
  • Chicken stock cube
  • A little lemon juice
  • Olive oil
  • Sweet chili sauce
  • Greens
  • Salt
  • Pepper

Preparation video

In a saucepan of water, bring the rice to the boil. When the water boils, add the stock cube and salt. Cook the rice for about 15 minutes. While the rice is boiling, add the chicken, cut into small pieces, to a bowl, add the chicken seasoning, salt, pepper and lemon juice. Mix by hand and leave to marinate for 10 minutes. Then pour olive oil in a preheated pan and fry the chicken. Slightly fry on both sides, add the sliced yellow and red peppers, as well as the broccoli, finely chopped onion, halved tomatoes, salt, pepper, basil and garlic seasoning. Mix everything together, cover and sauté for about 10 minutes, stirring occasionally. Then add the rice, chili sauce, green peas and stir well. Garnish with herbs.
