Barley porridge

Ingredients

For 2 servings

  • Half a cup barley groats
  • 3 medium-sized potatoes, diced
  • 2 slices bacon, chopped
  • 1 cup boiling water
  • 1 cup milk
  • 1 tablespoon thyme leaves
  • Pinch of salt
  • Dash of pepper
  • 3 tablespoons Parmesan for serving

Preparation video

Fry the bacon in a pot over medium heat. Remove and set aside. Pour boiling water in the pot, bring to a boil, add the barley and boil until halfway cooked, stirring occasionally. Add the potatoes, boil for a while, add the milk, salt, pepper and thyme.

Boil, stirring, until the potatoes are soft. Mix in the fried bacon, boil another 3 to 5 minutes.

Serve hot, top with Parmesan.
