Zucchini fritters with yogurt-herb sauce
Ingredients
Fritters
- 250g coarsely grated zucchini
- 100g flour
- 2 beaten eggs
- 3 tablespoons grated hard cheese
- 2 tablespoons chopped chives
- Salt, pepper
- Oil for frying
Sauce
- 100g Greek yogurt
- 50g mayonnaise
- 2 tablespoons chopped parsley
- 2 tablespoons olive oil
- 1 tablespoon chopped dill
- 1 tablespoon lemon juice
- Minced garlic clove
- Pinch of salt and pepper
Preparation video
Mix all the ingredients for the sauce.
Toss the zucchini with a pinch of salt, let stand for 10 minutes. Drain. Mix the zucchini carefully with flour, eggs, cheese, chives, salt and pepper. Fry in small batches in olive oil on medium-high heat, 3 to 5 minutes on each side until crispy and golden brown.
Serve with the sauce.
