Spring New Potato Salad with Fresh Herbs

  • 20 g parsley
  • 5 g basil
  • 20 g dill
  • Pea sprouts
  • 25 g green onions
  • 60 g sour cream
  • 60 g mayonnaise
  • Salt
  • Pepper
  • 400 g small potatoes
  • 110 g radishes
  • Quail eggs

Preparation video

Place the parsley, basil, dill, pea sprouts, green onions, sour cream, mayonnaise, salt, and pepper into a blender and blend until smooth. Cut the small potatoes in half and boil them. In a large bowl, combine the cooled boiled potatoes, sliced radishes, and the blended herb mixture. Gently mix everything together and transfer to a serving plate. Top with boiled quail eggs cut in halves and decorate with pea sprouts. Enjoy!
