Bean stew with pastry top
Ingredients
- Double sheet of puff pastry
- 1 chopped onion
- 1 small carrot, diced
- ½ celery stalk, sliced
- Pinch of ground cumin
- Pinch of ground coriander
- 200g boiled beans
- 150g smoked sausage, sliced
- 100ml heavy cream
- 80g pumpkin
- 1 tablespoon tomato puree
- Small handful of mushrooms
- 2 tablespoons grated cheese
- Sprigs of rosemary and thyme
- Pinch of salt
- Beaten egg for eggwash
Preparation video
Preheat oven to 180 C. Roll out the dough and cut it so that it covers the surface of the baking dish. In the baking dish, heat a tablespoon of oil and fry the onion, carrot and celery with cumin and coriander. Add the sausage and flash-fry. Add the mushrooms and pumpkin. Stir in the beans. Add the tomato puree, salt, and cheese. Stir. Place a sprig of thyme and rosemary on top. Cover the dish with pastry, seal the edges. Brush with the egg. Bake for 20 minutes.
