Italian cold tomato soup
Ingredients
For 2 servings
- 500–700ml tomato juice
- 2 large tomatoes (cored, diced)
- 1 long cucumber (diced))
- 1/2 yellow pepper (diced)
- 2 minced garlic cloves
- 2 tablespoons chopped parsley
- 2 tablespoons lemon juice
- 2–3 tablespoons olive oil
- 1 teaspoon salt
- Big dash of black pepper
- Tabasco to taste
