Italian pasta salad
Ingredients
- 350 g pasta
- 400 g cherry tomatoes
- 230 g cucumber
- 200 g bell pepper
- 100 g mini mozzarella balls
- 30 g hard cheese
- 25 g olive oil
- 20 g mayonnaise
- 20 g fresh parsley
- 10 g white wine vinegar
- 10 black olives
- 2 tablespoons herb pesto
- 2 garlic cloves
- 1/2 teaspoons dried basil
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried parsley
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon salt
- 1 teaspoon honey
- 1 red onion
- Chicken stock cube
- Basil leaves for decor
Preparation video
In a saucepan, bring the pasta to the boil, adding the chicken stock cube. When the pasta is cooked and the water has been drained, stir in the herb pesto.
For the salad dressing, in a bowl, mix the olive oil, white wine vinegar, grated garlic cloves, mayonnaise, dried basil, parsley, oregano, ground black pepper, finely grated hard cheese, honey and salt.
In a large bowl, add halved cherry tomatoes, sliced cucumber, onion, bell pepper, halved olives, chopped fresh parsley, mozzarella cheese balls and mix thoroughly. Add the pasta, the prepared sauce and mix again. Arrange on a plate and garnish with basil leaves.
