Spring power bowl
Ingredients
- 1 sweet potato
- A handful broccoli florets
- A handful of cherry tomatoes
- A handful ofmicrogreens
- A handful of green peas
- A handful of greens
- 1 cucumber
- 100g yogurt
- 1 teaspoon curry
- Green onions
- Salt to taste
- Pepper to taste
Preparation video
To prepare the sweet potato place baking paper in the baking pan and add peeled and sliced sweet potato. Add 2 tablespoons of olive oil and bake in the oven on 180C for 20 minutes.
To prepare the green peas in a bowl add a glass of hot water and a handful of frozen green peas. Thaw for 2 minutes, then rinse. To prepare yogurt-curry sauce in a bowl add 100 g yogurt, 1 teaspoon curry powder and mix ingredients.
To serve in a bowl add handful of greens, sweet potato, broccoli florets, cherry tomatoes, cucumber slices, yogurt-curry sauce, microgreens, chopped green onions, salt and pepper to taste.
