Cold soup

Ingredients

For 4 servings

  • 1.5 kg Alma kefir 2.5% with lactic acid bacteria and vitamin D
  • 500 ml pickled beets
  • 200 g cucumber
  • 30 g dill
  • 20 g chives or spring onions
  • 3 eggs
  • ½ teaspoons horseradish
  • ½ tējkarotes mārrutku
  • Salt
  • Pepper
  • Parsley and ½ egg for garnish

Preparation video

Mix kefir, hard-boiled and chopped eggs, chopped cucumber, beetroot, chopped spring onions, chopped dill, mustard, horseradish, salt and pepper in a large bowl. Leave in the fridge to chill for 15 minutes. Serve garnished with boiled egg quarters and parsley.
