Chicken thighs with potato wedges
Ingredients
- 8 chicken thighs
- 4 medium potatoes (unpeeled, cleaned, cut in wedges)
- 50ml olive oil
- 2 tablespoons lemon zest
- 6 garlic cloves, minced
- Lemon juice
- ½ small lemon, thinly sliced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt, ground black pepper
- 2 tablespoons chopped parsley
Preparation video
Preheat oven to 220 C. In a mixing bowl, mix oil, lemon zest and juice, garlic and spices. Add the chicken and potatoes, mix thoroughly. Place on the baking tray, topping with lemon slices. Bake for 30 minutes.
Remove from oven, flip the thighs and bake for another 20 minutes.
