Curd cake
Ingredients
- 500 g curd (9%)
- 470 g flour
- 440 g sugar
- 200 g butter
- 3 eggs
- 3 g lemon zest
- Dash of vanilla
- Pinch of salt
- Pinch of baking soda
Preparation video
In a mixing bowl, combine the curd, eggs, 260 g of sugar, grated lemon zest, vanilla, and blend until smooth. Prepare the base. In a separate bowl, combine flour, soft butter, 180 g sugar, salt, and baking soda. Knead into a crumble. Aim for the consistency of breadcrumbs so that the butter is not noticeable. Grease the baking pan with butter and add half of the crumble. Even out the dough and form slight edges. Pour the curd filling and even it out. Top with the rest of the crumble and again even them out. Bake at 180 C for 40 minutes. When ready, remove from the oven and let cool. Decorate with chocolate beads and mint leaves.
